Back-to-school season means early mornings, packed lunches, after-school hunger, and busy family dinners. These four Bukharian-inspired recipes bring the flavors of home into the school-day routine, with something for breakfast, lunch, snack time, and dinner.


 

Qatlama-e Tokhum

Savory Egg & Scallion Breakfast Pancakes

Thin, tender pancakes filled with scallions and fresh dill — easy to make ahead and warm up on a busy school morning.

Ingredients

  • 4 eggs
  • ½ cup flour
  • ½ cup water
  • 4 scallions, finely sliced
  • 2 tbsp chopped dill
  • ½ tsp salt
  • Black pepper, to taste
  • Oil, for the pan

Instructions

  1. Whisk eggs, flour, and water until smooth.
  2. Stir in scallions, dill, salt, and pepper.
  3. Lightly oil a skillet and pour in a thin layer of batter.
  4. Cook for 2–3 minutes per side, until lightly golden.
  5. Stack, cool slightly, and cut into wedges.

Make-Ahead Tip: Refrigerate overnight and warm briefly in the morning.

Apple & Walnut After-School Bites

Chewy bites of dried apple, walnuts, oats, and dates — a simple snack waiting for everyone when the school day ends.

Ingredients

  • - 1 cup finely chopped dried apples
  • - ¾ cup walnuts
  • - ½ cup rolled oats
  • - 2 tbsp date paste
  • - ½ tsp cinnamon
  • - Pinch of salt

Instructions

  1. Pulse apples and walnuts in a food processor until finely chopped.
  2. Add oats, date paste, cinnamon, and salt.
  3. Pulse just until the mixture holds together.
  4. Roll into small, slightly irregular bites.
  5. Refrigerate for 30 minutes before serving.

Familiar Bukharian beef-and-rice flavors baked into individual portions that are easy to pack and eat.

Ingredients

  • - 2 cups cooked rice
  • - ½ lb ground beef
  • - 1 small onion, finely chopped
  • - 1 small carrot, finely diced
  • - ½ tsp cumin
  • - Salt and black pepper, to taste
  • - 1 egg
  • - 1 tbsp oil

Instructions

  1. Heat oil and sauté onion and carrot until softened.
  2. Add beef, cumin, salt, and pepper; cook until browned.
  3. Combine the beef mixture with cooked rice and egg.
  4. Press into a lightly greased muffin pan.
  5. Bake at 375°F for 15–18 minutes, until set with lightly crisp edges.
  6. Cool for several minutes before removing.

Instructions

  5. Cook for 8–10 minutes, until the tomatoes form a light sauce.
