Early March in New York still carries the chill of winter, but the days slowly begin to stretch a little longer. In Bukharian homes, this in-between season brings dishes that remain warm and comforting while beginning to feel lighter. Carrots, cabbage, onions, herbs, and gentle spices are cooked slowly and simply, creating meals that feel nourishing after a long winter and welcoming as spring slowly approaches.

 

Sabzi-e Zardak Tava

Bukharian Carrot & Herb Skillet

Sweet carrots sautéed with onions, dill, and cumin until tender and fragrant.

Ingredients

  • 4 carrots, sliced into rounds
  • 1 onion, sliced
  • 3 tbsp oil
  • Salt
  • Black pepper
  • Pinch cumin
  • ½ cup chopped dill

Instructions

  1. Heat oil in a wide skillet and sauté onions until soft.
  2. Add carrots, salt, pepper, and cumin.
  3. Cook slowly, stirring occasionally, until carrots soften and begin to caramelize.
  4. Stir in fresh dill before serving.

 

Tovuq-e Piyoz

Chicken Braised with Onions

Chicken simmered slowly with onions until deeply savory and tender.

Ingredients

  • 4 chicken thighs
  • 2 large onions, sliced
  • 3 tbsp oil
  • Salt
  • Black pepper
  • Pinch cumin

Instructions

  1. Heat oil in a pot and brown the chicken lightly.
  2. Add onions, salt, pepper, and cumin.
  3. Cover and cook on low heat for about 40 minutes until onions become soft and rich.
  4. Serve hot with bread or rice.

Bukharian Fried Cabbage

Cabbage cooked slowly with garlic and onions until soft with lightly crisp edges.

Ingredients

  • ½ head cabbage, thinly sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 3 tbsp oil
  • Salt
  • Black pepper

Instructions

  1. Heat oil and cook onion until soft.
  2. Add cabbage and season with salt and pepper.
  3. Cook over medium heat, stirring occasionally, until cabbage softens and begins to brown.
  4. Stir in garlic during the last few minutes of cooking.

Bukharian Honey Tea Cookies

Simple honey cookies often served with hot tea on cold afternoons.

Ingredients

  • 2 cups flour
  • ½ cup honey
  • ½ cup oil
  • 1 egg
  • 1 tsp baking powder
  • Pinch cinnamon

Instructions

  1. Mix honey, oil, and egg until smooth.
  2. Stir in flour, baking powder, and cinnamon.
  3. Shape into small rounds and place on a baking tray.
  4. Bake at 350°F for 12–15 minutes until lightly golden.
  5. Cool before serving.
