Oven-Baked Falafel

Many of you have falafel balls on your plan. Here’s a delicious recipe you can make yourself.

Yield: 2-3 servings (count each serving as a protein)

Ingredients:

  • Olive oil spray
  • 1 (15- to 19-oz.) can chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 tablespoon parsley
  • 2 tablespoons whole-wheat flour
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon baking powder
  • Salt and pepper (to taste)

Directions:

  1. Spray a glass baking dish with olive oil spray and preheat oven to 350°F.
  2. While oven is preheating, puree chickpeas in food processor. Add onion and garlic and blend.
  3. Add remaining ingredients to make a thick, paste-like consistency.
  4. Shape into 12 ping-pong-size balls and place on baking dish in preheated oven.
  5. Bake for 15-20 minutes, turning halfway through baking.
