Ingredients
- 2 medium eggplants, sliced thick
- 2 tbsp oil
- Salt
- 1 cup thick plain yogurt
- 1 small clove garlic, grated
- Black pepper
Instructions
- Lightly salt eggplant slices and let sit 15 minutes.
- Pat dry and pan-cook in oil over medium heat until soft and golden.
- Stir garlic into yogurt.
- Spoon yogurt over warm eggplant and season with black pepper.
- Serve immediately with bread.
Kulcha-e Kunjid
Bukharian Sesame Winter Cookies
Lightly sweet cookies coated in toasted sesame seeds — perfect with hot tea. Sesame-coated winter cookies, made for tea while the snow falls.
Ingredients
- 2 cups flour
- ½ cup sugar
- ½ cup oil
- 2 eggs
- 1 tsp baking powder
- Pinch salt
- ½ cup sesame seeds
Instructions
- Mix eggs, sugar, and oil until smooth.
- Stir in flour, baking powder, and salt.
- Shape into rounds and press lightly.
- Roll tops in sesame seeds.
- Bake at 350°F for 15–18 minutes, until lightly golden. Cool before serving.
