Oshi Kadu
Pumpkin & Rice Stew
A softly simmered winter stew where pumpkin melts gently into rice and onions, creating a naturally comforting dish that warms from the inside out.
Ingredients:
- 2 cups pumpkin, cubed
- 1 cup rice
- 1 onion, chopped
- 3 tbsp oil
- Salt and black pepper
- 4 cups water
Instructions:
- Sauté onion in oil until soft and translucent.
- Add pumpkin, rice, salt, and pepper.
- Pour in water and simmer until the rice is tender and the pumpkin softens into the stew.
- Serve warm with fresh bread.
Chalpak-e Non
Bukharian Fried Flatbread
Thin dough fried until golden and blistered — crisp on the outside, soft on the inside, and best enjoyed fresh from the pan.
Ingredients:
- 2 cups flour
- ¾ cup warm water
- Pinch of salt
- Oil for frying
Instructions:
- Mix flour, water, and salt to form a soft dough. Rest for 20 minutes.
- Divide dough into small balls and roll thin.
- Fry in hot oil until puffed and golden on both sides.
- Serve immediately.
Qovurdoq-e Gusht
Fried Beef with Onions
Beef cooked slowly in its own fat with onions until deeply caramelized — rich, hearty, and perfect for cold days.
Ingredients:
- 1½ lbs beef, cut into chunks
- 2 onions, thinly sliced
- 3 tbsp oil
- Salt and black pepper
- Pinch of cumin (optional)
Instructions:
- Heat oil in a pan and add beef. Cook slowly until browned and tender.
- Add onions, salt, pepper, and cumin.
- Continue cooking on low heat until onions are soft and deeply golden.
- Serve hot with flatbread or rice.
Shirin-e Sabzi Herb & Walnut Sweet
A traditional Bukharian dessert where finely chopped herbs and ground walnuts meet gentle sweetness — subtle, fragrant, and nostalgic.
Ingredients:
- ½ cup finely chopped fresh herbs (parsley and dill)
- ½ cup ground walnuts
- 3 tbsp sugar or honey
- 1 egg
- 1 tbsp flour
Instructions:
- Combine all ingredients into a thick batter.
- Spread into a lightly greased baking dish.
- Bake at 350°F for 20–25 minutes, until set.
- Cool slightly before slicing and serving.
